Ingredients

Cookie Crust

  • 1 roll sugar cookie dough (16.5 ounces)

Cream Cheese Frosting

  • 8 ounces cream cheese, softened
  • ¼ cup sugar
  • 1 teaspoon vanilla extract
  • 1 tub whipped topping (8 ounces)

Toppings

  • Fresh blueberries, as needed
  • Fresh strawberries, sliced, as needed

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line a 9″ x 13″ pan with parchment paper to prevent sticking and ensure easy removal.
  2. Shape the Sugar Cookie Dough: Slice the sugar cookie dough and place pieces onto the prepared pan. Place a piece of parchment paper on top of the dough and gently press to spread it evenly covering the bottom of the pan. Push the dough towards the edges to form a border. After spreading, use a fork to poke holes evenly across the dough to prevent bubbling while baking.
  3. Bake the Crust: Bake the cookie dough in the preheated oven for 14-16 minutes or until it’s lightly golden brown around the edges. Remove from the oven and allow it to cool completely in the pan to set the crust.
  4. Prepare the Cream Cheese Frosting: In a large bowl, use an electric mixer to blend the softened cream cheese, sugar, and vanilla extract until smooth and creamy. Gently fold in the whipped topping until combined for a light, fluffy frosting.
  5. Assemble the Fruit Pizza: Spread a generous and even layer of the cream cheese mixture over the cooled cookie crust. Arrange fresh blueberries and sliced strawberries on top to decorate. You can also pipe some of the remaining frosting onto the edges or center of the fruit pizza for added decoration.
  6. Chill Before Serving: Let the assembled fruit pizza chill in the refrigerator for at least 1 hour to allow the frosting to set properly and flavors to meld before slicing and serving.
