Instructions

  1. Prepare the Marinade: In a medium bowl, combine chopped cilantro, olive oil, reduced sodium soy sauce, fresh orange juice, lime juice, minced garlic, diced jalapeno, ground cumin, and 1 teaspoon freshly ground black pepper. Mix well to blend all the flavors together. Set aside 1/2 cup of this mixture in the refrigerator to be used later as a sauce.
  2. Marinate the Steak: Place the flank steak and the remaining marinade into a large gallon-size resealable plastic bag or a large bowl. Seal or cover and refrigerate for at least 4 hours, preferably overnight, turning the bag occasionally to ensure even marination. After marinating, remove the steak from the marinade and drain off excess liquid.
  3. Preheat the Grill: Heat your grill to high, ensuring it’s hot enough to sear the steak properly. This high heat will give the steak a tasty, caramelized crust.
  4. Prepare the Steak for Grilling: Using paper towels, pat both sides of the flank steak dry to remove moisture for a better sear. Season both sides with kosher salt and additional freshly ground black pepper to taste.
