Jalapeno Peach Chicken Skewers are a vibrant and flavorful dish combining tender, seasoned chicken breasts with juicy yellow peaches and spicy jalapenos. Cooked in the air fryer for a perfectly charred finish and glazed with a sweet and tangy peach preserves sauce, these skewers make an ideal appetizer or main course for summer grilling or quick weeknight dinners.

Ingredients

Chicken and Skewers

  • 15 wooden skewers (soaked in water for 30 minutes)
  • 2 pounds boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil

Fruit and Peppers

  • 4 yellow peaches (quartered, then halved to make 32 pieces)
  • 3 medium jalapeno peppers (halved, seeded, cut into chunks)

Peach Glaze

  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic (minced)
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Instructions

  1. Season the chicken. In a large bowl, toss the cubed chicken breasts with kosher salt, black pepper, chili powder, and 2 tablespoons of extra virgin olive oil until evenly coated to build the base flavor.
  2. Assemble the skewers. Thread the ingredients onto each soaked wooden skewer in the following order: peach piece, chicken cube, jalapeno chunk, chicken cube, jalapeno chunk, chicken cube, and ending with a peach piece. Feel free to customize the order to your liking.
  3. Preheat the air fryer. Set the air fryer to 375°F (190°C) and allow it to reach the temperature before cooking to ensure even cooking.
  4. Prepare skewers for cooking. Brush each skewer generously with olive oil to prevent sticking and to help achieve a nice char during air frying.
  5. Cook the skewers. Place the skewers in a single layer in the air fryer basket. You may need to cook in batches depending on your air fryer’s size. Air fry for 11-12 minutes, turning halfway if desired, until the chicken reaches an internal temperature of 165°F (74°C).
  6. Make the peach glaze. While the skewers cook, combine peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes in a medium saucepan. Stir to combine and warm over medium heat until the glaze is heated through and slightly thickened.
  7. Glaze and serve. Once the skewers are cooked, brush them generously with the warm peach glaze to add a glossy, flavorful finish. Serve the skewers warm as a delightful appetizer or main course.

Notes

  • Soaking wooden skewers in water prevents them from burning during cooking.
  • Adjust the quantity of jalapenos based on your preferred spice level; removing seeds reduces heat.
  • You can substitute peaches with nectarines if peaches are unavailable.
  • If you don’t have an air fryer, these skewers can also be grilled or broiled in an oven.
