Ice Scramble, also known as Iskrambol, is a delightful Filipino frozen treat perfect for hot days. This colorful, creamy shaved ice dessert combines the refreshing chill of ice with the sweetness of skim powdered milk, wash sugar, banana extract, and vibrant food coloring. Topped with fun and tasty garnishes like mini-marshmallows, colored sprinkles, wafer sticks, and chocolate syrup, it’s a playful and indulgent snack that’s easy to prepare and loved by kids and adults alike.

Ingredients

Ice Scramble Base:

  • 4 cups shaved ice
  • 1 cup skim powdered milk
  • ¼ cup wash sugar
  • ½ tsp banana extract
  • A few drops of red/pink food color gel

Toppings:

  • ¼ cup skim powdered milk
  • ¼ cup colored mini-marshmallows
  • 1 tbsp colored sprinkles (optional)
  • 6 pcs wafer sticks, halved (optional)
  • 2 tbsp chocolate syrup

Instructions

  1. Prepare the ice: Prepare crushed or shaved ice, making at least 1 cup more than needed to ensure you have enough. Keep the ice in the freezer until ready to use as it melts quickly.
  2. Choose the mixing vessel: Ideally, use an ice bucket as it perfectly holds and mixes the Ice Scramble base, and also serves as storage while preparing.
  3. Mix the base: In a mixing bowl or ice bucket, combine the shaved ice with the skim powdered milk, stirring lightly but quickly so the ice does not melt too fast.
  4. Add flavorings: Mix in the wash sugar, banana extract, and red/pink food coloring gel. Stir until all ingredients are well blended and the mixture has an appealing color.
  5. Assemble the dessert: Ladle the Ice Scramble mixture into plastic cups, filling each about halfway. Sprinkle a layer of skim powdered milk over the ice, then add another layer of Ice Scramble.
  6. Add toppings: Top the final layer with more skim powdered milk, colored mini-marshmallows, colored sprinkles (if using), wafer stick halves, and drizzle generously with chocolate syrup.
  7. Serve immediately: Serve right away with a spoon or straw to enjoy the creamy, sweet, icy dessert at its freshest and coldest.

  • Shaved or crushed ice melts quickly, so keep it frozen until just before mixing and serving.
  • An ice bucket is the preferred container for mixing and serving, but a large bowl works as a substitute.
  • Adjust sweetness by varying the amount of wash sugar according to your taste.
