Honey Balsamic Cabbage Steaks are a flavorful and easy-to-make roasted vegetable dish that combines the natural sweetness of honey with the tangy depth of balsamic vinegar. This recipe features thick-cut cabbage steaks roasted to tender perfection and glazed with a delightful honey-balsamic mixture. Perfect as a vegan side or a wholesome main, they can be customized with optional toppings like crumbled feta cheese or toasted nuts for extra texture and flavor.

Ingredients

Main Ingredients

  • 1 large head green cabbage (about 34 pounds) (Choose a firm, fresh head with vibrant leaves)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Optional Toppings

  • Crumbled feta cheese
  • Toasted nuts (such as walnuts or pecans)

Instructions

  1. Preparation: Remove any damaged outer leaves from the cabbage. Slice the cabbage into 1-inch thick steaks making sure to keep the core intact to hold the steaks together.
  2. Preheat the oven: Set your oven to 400°F (200°C) to ensure it is ready for roasting the cabbage steaks.
  3. Mix the glaze: In a small bowl, whisk together the balsamic vinegar, honey (or maple syrup), olive oil, salt, and pepper until the mixture is smooth and well combined.
  4. Prepare cabbage for roasting: Place the cabbage steaks on a lined baking sheet in a single layer. Brush each side generously with the honey-balsamic mixture to coat evenly.
  5. Roast the cabbage: Put the baking sheet in the preheated oven and roast the steaks for 20-25 minutes, flipping them halfway through cooking. Roast until the cabbage is tender and has a golden-brown caramelized surface.
  6. Serve: Remove the cabbage steaks from the oven and serve immediately while warm. Garnish with optional toppings such as crumbled feta or toasted nuts if desired.

Notes

  • For a vegan version, substitute honey with maple syrup.
  • Keep the core intact when slicing so the cabbage steaks hold together during roasting.
  • Use a sharp knife for clean, even cuts of the cabbage steaks.
  • Optional toppings like feta and nuts add texture and additional flavor but can be omitted for a simple dish.
  • Adjust seasoning with salt and pepper according to taste preferences.
