Instructions

  1. Combine Ingredients: In a small saucepan over medium heat, combine tamari, brown sugar, minced ginger, minced garlic, honey, sesame oil, and mirin. Stir gently and bring the mixture to a low simmer to meld the flavors together.
  2. Thicken the Sauce: In a separate small cup, mix cornstarch with ¼ cup cold water until fully dissolved. Slowly whisk this slurry into the simmering teriyaki sauce. Continue stirring and bring back to a simmer until the sauce thickens to your desired consistency, ensuring it does not burn on the bottom.
  3. Store Appropriately: Once thickened, remove from heat and let the sauce cool. Transfer to an airtight jar and store in the refrigerator for up to 2 weeks. Alternatively, freeze for up to 3 months for longer storage.
