These Healthy Spinach Tortillas are a nutritious and gluten-free alternative to traditional tortillas made with chickpea and tapioca flours blended with fresh spinach. Soft, pliable, and naturally colorful, they are perfect for tacos, burritos, or wraps and come together quickly in about 20 minutes using a simple stovetop pan-cooking method.

Ingredients

Dry Ingredients

  • 1 cup chickpea flour (also called garbanzo bean flour)
  • 1/2 cup tapioca flour/starch
  • 1/3 tsp salt

Wet Ingredients

  • 2 oz fresh baby spinach leaves
  • 11 1/8 cup water (adjust according to desired tortilla thickness)

Instructions

  1. Blend Ingredients: Place the chickpea flour, tapioca flour, salt, fresh baby spinach leaves, and 1 cup of water (or 1 1/8 cups for thinner tortillas) into a food processor or blender. Process until the batter is completely smooth, ensuring there are no lumps.
  2. Heat Skillet: Preheat a non-stick skillet over low to medium heat. Optionally, add a few drops of oil, but the recipe works well without any oil to keep the tortillas light and healthy.
  3. Cook Tortillas: Pour about 1/3 cup of the batter into the hot skillet, spreading slightly if needed. Cook the tortilla for about two minutes on one side until the edges start to lift and the surface looks set.
  4. Flip and Finish: Carefully flip the tortilla and cook for another one minute on the other side until fully cooked through and flexible.
  5. Serve: Remove from skillet and serve warm. Repeat the process with remaining batter. Enjoy your healthy spinach tortillas as the base for tacos, burritos, or wraps.
