Packed with diced red bell peppers, scallions, and crumbled feta cheese, these muffins are perfect for meal prep and quick breakfasts. Baked to perfection, they offer a protein-rich, flavorful breakfast that’s easy to make and enjoy throughout the week.

Ingredients

Vegetables

  • 2 cups diced red bell pepper (about 2 medium)
  • ½ cup chopped scallions
  • 1 garlic clove, grated

Egg Mixture

  • 9 large eggs
  • Heaping ½ teaspoon sea salt
  • Freshly ground black pepper, to taste
  • 3 tablespoons all-purpose flour
  • ¾ teaspoon baking powder

Other

  • Extra-virgin olive oil, for greasing the pan
  • ⅓ cup crumbled feta cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the right temperature for baking the egg muffins evenly.
  2. Prepare Muffin Tin: Lightly grease a nonstick muffin tin with extra-virgin olive oil to prevent sticking and help with easy removal of muffins after baking. Evenly divide the diced red bell peppers and chopped scallions among the muffin cups, distributing the vegetables to create flavorful pockets in each muffin.
  3. Mix Egg Batter: In a large bowl, whisk the 9 large eggs thoroughly. Add the grated garlic, sea salt, and freshly ground black pepper for seasoning. Sprinkle the flour and baking powder on top, then whisk again until mostly combined; a few small clumps of flour are fine and won’t affect the texture significantly.
  4. Fill Muffin Cups: Pour the egg mixture evenly into each muffin cup, using about a scant ¼ cup per cup. This ensures all 12 muffins are evenly sized. Top each filled cup with a sprinkle of crumbled feta cheese to add a tangy, salty flavor.
  5. Bake: Place the muffin tin in the preheated oven and bake for 22 to 24 minutes, or until the egg muffins are fully set and slightly golden on the edges.
  6. Cool and Serve: Allow the muffins to cool in the pan before removing. This helps them firm up and makes them easier to pop out without breaking. Serve warm or store for later meal prep.

Notes

  • For best results, use a nonstick muffin tin or silicone muffin cups to prevent sticking.
  • These muffins can be stored in an airtight container in the refrigerator for up to 4 days.
  • Reheat in microwave for 30-45 seconds or until warm.
  • You can customize by adding other vegetables or cooked meats as desired.
  • Do not overbake to keep muffins moist and tender.
