These Healthy 5-Ingredient Granola Bars are a quick and nutritious breakfast or snack option, made with simple whole-food ingredients like dates, oats, nuts, and natural nut butter. Toasting the oats and almonds enhances their flavor, while the combination of maple syrup and peanut butter binds the bars without added refined sugars. Perfectly packed and ready in just 15 minutes plus chilling time, these bars are naturally gluten-free when using gluten-free oats and can be customized with optional add-ins such as chocolate chips or dried fruit.

Ingredients

Main Ingredients

  • 1 heaping cup packed dates (pitted, preferably Deglet Noor or Medjool)
  • 1/4 cup maple syrup or agave nectar (or honey if not vegan)
  • 1/4 cup creamy salted natural peanut butter or almond butter
  • 1 cup roasted unsalted almonds (loosely chopped; see roasting instructions below)
  • 1 1/2 cups rolled oats (use gluten-free if needed)

Optional Additions

  • Chocolate chips
  • Dried fruit
  • Nuts
  • Banana chips
  • Vanilla extract

Instructions

  1. Process Dates: Place the pitted dates in a food processor and pulse until they break down into small bits and form a sticky, dough-like consistency, about 1 minute. The mixture should be able to roll into a ball.
  2. Toast Oats and Almonds (Optional): Preheat your oven to 350°F (176°C). Spread rolled oats and raw almonds on a baking sheet and toast for 10-15 minutes until slightly golden and fragrant. This adds a toasty flavor but can be skipped for raw bars.
  3. Combine Dry Ingredients: In a large mixing bowl, combine the toasted oats (or raw if skipping toasting), the roasted unsalted almonds, and the processed date mixture.
  4. Warm Syrup and Nut Butter: In a small saucepan over low heat, gently warm the maple syrup (or agave/honey) together with the peanut or almond butter, stirring until smooth and well combined. Remove from heat.
  5. Mix Everything Together: Pour the warmed syrup and nut butter mixture over the oat, almond, and date mixture. Stir well, breaking up any date clumps and ensuring all ingredients are thoroughly incorporated. Add any optional mix-ins such as chocolate chips or dried fruit at this point if desired.
  6. Press Mixture into Pan: Line an 8×8-inch baking dish or a similar small pan with parchment paper or plastic wrap for easy removal. Transfer the mixture into the pan and press down firmly and evenly using a flat object like the bottom of a drinking glass to compact and pack the bars tightly. This helps them hold together better.
  7. Chill to Firm Up: Cover the pan with parchment or plastic wrap and place it in the refrigerator or freezer. Let the bars chill for 15-20 minutes until firm.
  8. Slice and Store: Remove the chilled bars from the pan by lifting the parchment or plastic wrap. Cut into 10 even bars or 9 squares, depending on preferred size. Store the bars in an airtight container. They keep fresh for a few days at room temperature but can be stored in the freezer to maintain extra freshness.

Notes

  • Using gluten-free oats makes these bars suitable for gluten-free diets.
  • Toast the oats and almonds for a deeper, nuttier flavor, or skip toasting for a raw texture.
  • Pressing the bars firmly is key to helping them stay together without baking.
  • Store bars in an airtight container in the refrigerator or freezer for longer shelf life.
  • Feel free to add vanilla extract, chocolate chips, dried fruit, or banana chips for extra flavor and texture.
  • If you have raw almonds, roast them according to the toasting instructions before chopping.
