Ingredients

Potatoes & Oil

  • 2 pounds potatoes, scrubbed and quartered with skins on
  • 3 tablespoons olive oil

Seasoning Mix

  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon lemon pepper

Instructions

  1. Preheat and prepare potatoes. Preheat the oven to 350°F (175°C). Wash and scrub the potatoes thoroughly, then cut them into quarters, leaving the skins on. Toss the quartered potatoes in olive oil until they are well coated.
  2. Mix the seasonings. In a small bowl, combine the grated Parmesan cheese with salt, garlic powder, sweet paprika, onion powder, chili powder, and lemon pepper. Stir until evenly mixed.
  3. Arrange potatoes for baking. Line a baking sheet with non-stick foil or lightly spray with oil. Place the oiled potato quarters on the sheet evenly, ensuring they don’t overlap too much for even cooking.
  4. Apply seasonings. Sprinkle the cheese and spice mixture generously over the potatoes, making sure each piece is well coated with the flavorful blend.
  5. Bake the potatoes. Place the baking sheet in the preheated oven and bake the potatoes for 30 minutes.
  6. Adjust crispiness. To achieve crispy fries, turn the pan and bake for an additional 30 minutes. For softer fries, bake for just another 10 minutes after turning.
