Ingredients

Guacamole Base

  • 3 large ripe avocados, peeled and pitted
  • 1 (10-ounce) can RO*TEL® Diced Tomatoes & Green Chilies, drained
  • 1/2 cup chopped onion
  • 1 tablespoon lime juice
  • 1/2 teaspoon sea salt
  • Ground black pepper, to taste

Decorations

  • Blue corn tortilla chips, for serving and making the witch’s hat
  • Carrots, cut into long thin strips for hair and rough tops for facial warts
  • Petite Kosher dill pickle, for the nose
  • Red bell pepper, cut into a short twisted strip for the mouth
  • Lime, cut into 2 wedges for eyebrows
  • Yellow bell pepper, cut into 2 circular pieces for sunken eye sockets
  • Black olives, for the eyeballs (placed on top of yellow bell pepper circles)

Instructions

  1. Mash the avocados: In a medium bowl, use a fork to mash the peeled and pitted ripe avocados until you reach your desired consistency, either chunky or smooth.
  2. Mix in flavorings: Add the drained diced tomatoes and green chilies, chopped onion, and lime juice to the mashed avocados. Stir everything well to combine all the ingredients evenly.
  3. Season the guacamole: Sprinkle in the sea salt and ground black pepper to taste. Mix thoroughly to ensure even seasoning throughout the guacamole.
  4. Create the witch face: Arrange the guacamole on a serving plate. Use the carrot strips as hair, carrot tops as warts, a petite kosher dill pickle for the nose, a twisted red bell pepper strip for the mouth, lime wedges for eyebrows, yellow bell pepper circles for sunken eye sockets, and top these with black olives for eyeballs. Use blue corn tortilla chips to craft the witch’s hat and surround the guacamole for dipping.
  5. Serve: Present your spooky guacamole witch alongside additional blue corn tortilla chips for dipping, and enjoy immediately for best freshness and flavor.
