These Ground Beef Tacos are a quick and delicious meal perfect for any night of the week. Lean ground beef is seasoned with taco spices and simmered in tomato juice and vinegar to create a savory filling. Served with warm tortillas and classic toppings like shredded cheese, lettuce, tomatoes, onion, and sour cream, these tacos are easy to customize and sure to please a crowd.

Ingredients

Meat and Seasoning

  • 1 pound lean ground beef
  • 2 tablespoons taco seasoning (homemade or store-bought)
  • ½ cup tomato juice
  • 2 teaspoons apple cider vinegar (or lime juice)

Taco Shells and Beans

  • 8 to 12 flour tortillas (or corn tortillas, or crisp taco shells)
  • 1 (15 ounce) can refried beans, warmed (optional)

Toppings

  • Shredded cheddar cheese
  • Iceberg lettuce, shredded
  • 2 tomatoes, diced
  • 1 onion, diced
  • Sour cream (or salsa, guacamole, or pico de gallo)

Instructions

  1. Cook the ground beef: Place a large skillet over medium heat. Add the lean ground beef and cook, breaking it up with a spoon, until it is no longer pink. Drain any excess grease if needed to keep the tacos from being too oily.
  2. Season the beef: Stir in the taco seasoning, tomato juice, and apple cider vinegar (or lime juice). Bring the mixture to a gentle simmer and cook for about 5 minutes, stirring occasionally, allowing the liquid to reduce and the meat to absorb the flavors fully.
  3. Warm the tortillas: Heat the tortillas or taco shells in the microwave for 15 to 30 seconds until warm and pliable, making them easier to fill and fold.
  4. Assemble the tacos: Fill each warmed tortilla or taco shell with the seasoned ground beef. Add warmed refried beans if using, then top with shredded cheddar cheese, shredded lettuce, diced tomatoes, diced onion, and a dollop of sour cream, salsa, guacamole, or pico de gallo as desired.

Notes

  • Use lean ground beef to reduce grease and keep tacos healthier.
  • Adjust taco seasoning amount to taste or use a homemade blend to control sodium.
  • For gluten-free options, use corn tortillas instead of flour tortillas.
  • Warming the tortillas helps prevent them from cracking when filled.
  • Add extra toppings like jalapeños or fresh cilantro for more flavor.
