  • 2 lbs tomatoes, semi-firm (Roma, Vine ripened, Better boy, Heirloom), 3-5 inches in diameter

Marinade

  • 2 tablespoons olive oil, plus more for finishing
  • 2 tablespoons balsamic vinegar
  • 24 garlic cloves, finely minced
  • 23 tablespoons fresh oregano, chopped
  • ½ teaspoon salt, more for finishing
  • 1 teaspoon pepper

Instructions

  1. Preheat Grill: Preheat your grill to medium-high heat and make sure it is clean and well-greased to prevent sticking.
  2. Prepare Tomatoes: Remove the core from the tomatoes using a sharp knife. Slice them in half; cut through the core if using Roma tomatoes, or cut perpendicular to the core if using round tomatoes.
  3. Make Marinade and Coat Tomatoes: In a bowl, combine olive oil, balsamic vinegar, minced garlic, chopped oregano, salt, and pepper. Place tomato halves in the bowl and gently toss to coat thoroughly with the marinade.
  4. Grill Tomatoes: Place the tomatoes cut side down on the greased grill. Save the remaining marinade in the bowl. Cover and grill for 5-7 minutes or until deep grill marks appear. Using a thin metal spatula, flip the tomatoes and continue grilling while covered, checking every few minutes until they begin to soften but do not collapse.
  5. Keep Warm (Optional): If grilling other foods, you may keep the tomatoes warm in a 350°F oven until serving. For larger tomatoes, this will help soften them further gently.
  6. Serve: Arrange the grilled tomatoes on a platter, drizzle with the leftover marinade, sprinkle remaining oregano on top, add more olive oil if desired, and finish with a pinch of flaky salt.
