Ingredients

Salmon Fillet

  • 10.6 ounces skin-on salmon fillet (tail-end, 300 grams)

Seasoning & Garnishes

  • 1 tablespoon oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon granulated garlic
  • 1/8 teaspoon dill weed
  • Pinch of dill weed, for garnish
  • Chopped fresh parsley, for garnish
  • Slices of fresh lemon, for garnish

Instructions

  1. Dry the salmon: Pat the salmon fillet dry on all sides using paper towels to remove excess moisture for better searing and grill marks.
  2. Score the skin: Place the salmon on a wooden plate skin side up and carefully make two slits on the skin about 2 inches apart to help the skin crisp up while grilling.
  3. Oil the salmon: Grease all sides of the salmon fillet evenly with 1 tablespoon of oil to prevent sticking and enhance browning.
  4. Season the fillet: Mix granulated garlic, dill weed, kosher salt, and ground black pepper, then evenly season the entire salmon fillet to infuse flavor.
  5. Preheat and place on grill: Heat the grill to medium heat and lay the salmon fillet skin side down directly onto the grill grates.
  6. Grill first side: Cook the salmon undisturbed for 8 minutes until grill marks form and the skin is crisp.
  7. Flip and grill second side: Carefully turn the salmon over and grill undisturbed for an additional 7 minutes until the salmon flakes easily and reaches an internal temperature of 135°F (57.2°C) with nice grill marks.
  8. Rest the salmon: Remove from the grill and let rest for 10 minutes. This allows the internal temperature to rise to 145°F (63°C) through residual heat ensuring safe and moist salmon.
  9. Garnish and serve: Sprinkle a pinch of dill weed and chopped fresh parsley atop the salmon and serve with fresh lemon slices for added brightness and flavor.

Notes

  • Scoring the skin prevents the fillet from curling and helps the skin crisp up evenly.
  • Resting the salmon after grilling ensures it finishes cooking to a safe temperature without drying out.
  • Use a clean well-oiled grill to prevent sticking and achieve perfect grill marks.
  • Adjust grilling times slightly depending on the thickness of the fillet and heat of your grill.
  • Internal temperature of 145°F ensures the salmon is fully cooked and safe to eat, according to FDA guidelines.
