Ingredients

Dressing

  • 2 tablespoons fresh lemon juice

  • 1 1/2 teaspoon Dijon mustard

Instructions

  1. Cook green beans: Bring a large pot of salted water to a boil. Add the trimmed green beans and cook for 2 minutes until tender-crisp. Drain and pat dry to remove excess moisture, then transfer them to a large mixing bowl.
  2. Add fresh ingredients: To the bowl with green beans, add the halved grape tomatoes, thinly sliced Vidalia onions, and feta cheese crumbles. Gently toss to combine.
  3. Prepare dressing: In a small bowl or jar with a lid, combine fresh lemon juice, olive oil, Dijon mustard, minced garlic, salt, and pepper. Whisk or shake vigorously until the dressing is well emulsified.
