Ingredients

Burger Patties

  • 1 pound ground chicken
  • ¼ cup diced red onion
  • 3 garlic cloves, minced
  • ¼ cup sun-dried tomatoes, finely chopped
  • 1 cup baby spinach, roughly chopped (loosely packed)
  • 1 tablespoon chopped fresh dill
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil

Burger Assembly

  • Tzatziki sauce
  • Crumbled feta cheese
  • Sliced onion
  • Sliced tomato
  • Sliced avocado

Instructions

  1. Make the burger patties. In a medium bowl, combine ground chicken, diced red onion, minced garlic, chopped sun-dried tomatoes, roughly chopped baby spinach, fresh dill, dried oregano, kosher salt, and ground black pepper. Use your hands to thoroughly mix all the ingredients. Divide the mixture into four equal portions and shape each into a large, firm patty.
  2. Cook the patties. Heat extra virgin olive oil in a large skillet over medium heat. Place the patties in the skillet and cook for about 5 minutes on each side, or until golden brown and fully cooked through (internal temperature should reach 165°F/74°C). Alternatively, you can grill the chicken patties over medium heat until cooked.
  3. Assemble the chicken burger. Serve the cooked patties plain or build delicious chicken burgers by placing each patty on butter lettuce leaves or buns. Top with tzatziki sauce, crumbled feta cheese, sliced onion, tomato, and avocado according to your preference.
