Baked to a perfect golden crisp, this homemade granola is naturally sweetened with maple syrup and enriched with coconut oil, offering a wholesome and delicious breakfast or snack option.

Ingredients

Wet Ingredients

  • 2/3 cup maple syrup
  • 1/3 cup coconut oil
  • 1 teaspoon vanilla extract

Spices and Seasonings

  • 1 1/2 tablespoons ground turmeric
  • 1 tablespoon ground ginger
  • 1 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon freshly-ground black pepper

Dry Ingredients

  • 3 cups old-fashioned (rolled) oats
  • 1 cup sliced or slivered almonds
  • 2/3 cup unsweetened coconut flakes
  • 1/2 cup chopped pecans
  • 1/2 cup sunflower seeds
  • 1/2 cup chopped dried apricots or golden raisins (or a mix of the two)

Instructions

  1. Prep the oven and baking sheet: Preheat your oven to 300°F (150°C). Line an 18 x 13 inch half sheet pan with parchment paper and set aside to ensure the granola does not stick during baking.
  2. Heat the wet ingredients: In a small saucepan, combine maple syrup, coconut oil, sea salt, turmeric, ginger, cinnamon, vanilla extract, and black pepper. Warm over medium heat for 4-5 minutes, whisking continuously until the coconut oil melts and the mixture is warm but not simmering. Remove from heat to stop cooking.
  3. Add the dry ingredients: In a large mixing bowl, combine rolled oats, sliced almonds, coconut flakes, chopped pecans, and sunflower seeds. Drizzle the warm maple syrup mixture over the dry ingredients and gently toss until everything is evenly coated.
  4. Bake the granola: Spread the granola mixture evenly on the prepared sheet pan and gently press down with a spatula to compact slightly. Bake for 25 minutes, remove the pan without stirring, then rotate it 180 degrees for even baking. Continue baking for an additional 15-20 minutes or until the granola turns lightly golden on top. Place the pan on a wire rack and allow the granola to cool completely.
  5. Finish and serve: Once cooled, break the granola into chunks of your desired size using your hands. Toss in the chopped dried apricots or golden raisins. Serve immediately or store in an airtight container for up to 2 weeks for a delicious, crunchy snack or breakfast topping.

Notes

  • Pressing the granola firmly before baking helps create crunchy clusters.
  • Be sure not to overheat the syrup mixture, as simmering can affect the flavor.
  • Rotation of the pan during baking promotes even browning.
  • This granola is great served with yogurt, milk, or as a trail mix addition.
  • Store in an airtight container at room temperature to maintain freshness.
