Ingredients

Base Mixture

  • 6 tablespoons butter
  • 16 ounces mini marshmallows
  • 8 cups Golden Grahams cereal

Mix-Ins and Topping

  • 5 ounces mini marshmallows
  • 3/4 cup mini semisweet chocolate chips (divided: 1/2 cup and 1/4 cup)
  • 1/4 cup Golden Grahams cereal (for sprinkling)

Instructions

  1. Prepare the Baking Dish: Grease a 9×13-inch baking dish thoroughly to ensure the s’mores bars won’t stick, then set it aside while you prepare the ingredients.
  2. Melt the Butter: Place a large saucepan over low heat and begin melting 6 tablespoons of butter until mostly melted, taking care not to burn it.
  3. Add Marshmallows: Add 16 ounces of mini marshmallows to the melted butter and stir constantly until they have completely melted into a smooth mixture.
  4. Remove from Heat: Once the marshmallows are fully melted, remove the saucepan from the heat to prevent the mixture from cooking further.
  5. Incorporate Cereal: Stir in 8 cups of Golden Grahams cereal into the melted marshmallow mixture until well combined and evenly coated.
  6. Add Remaining Marshmallows and Chocolate Chips: Mix in the remaining 5 ounces of mini marshmallows and 1/2 cup of mini semisweet chocolate chips to the cereal mixture, folding gently to distribute.
  7. Press into Dish: Transfer the mixture into the prepared baking dish and press down firmly to create an even layer that holds together.
  8. Top with Cereal and Chocolate: Sprinkle the top evenly with the remaining 1/4 cup Golden Grahams cereal and 1/4 cup mini semisweet chocolate chips, adding texture and an extra burst of flavor.
  9. Cool and Serve: Allow the bars to cool to room temperature so they can firm up before cutting into squares and serving.

Notes

  • Ensure the baking dish is well greased to avoid sticking.
  • Use low heat when melting butter and marshmallows to prevent burning.
  • For a firmer texture, refrigerate the bars for 30 minutes after cooling.
  • These bars can be stored in an airtight container at room temperature for up to 3 days.
  • Feel free to add nuts or other mix-ins for added crunch and flavor.
