Ingredients

Sauce

  • 1/4 cup tamari or soy sauce
  • 1/4 cup low sodium chicken broth
  • 2 teaspoon toasted sesame oil
  • 1 tablespoon honey
  • 6 garlic cloves, minced
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon tapioca flour

Main

  • 2 tablespoon avocado oil
  • 1 head broccoli, cut into small florets
  • 1 red bell pepper, core removed and thinly sliced
  • 1/2 red onion, peeled and thinly sliced
  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Chili oil, optional for serving

Instructions

  1. Prepare the sauce. In a small bowl, whisk together tamari, chicken broth, toasted sesame oil, honey, minced garlic, freshly grated ginger, and tapioca flour until well combined. Set this mixture aside to develop flavor.
  2. Sauté the vegetables. Heat avocado oil in a large, deep nonstick skillet over medium heat. Add the broccoli florets, thinly sliced red bell pepper, and sliced red onion. Cook while stirring occasionally until the vegetables become slightly tender, about 4 to 5 minutes, ensuring they retain some crunch.
  3. Cook the shrimp partially. Add the peeled and deveined shrimp to the skillet along with kosher salt and freshly ground black pepper. Toss and cook just until the shrimp begin turning pink but are not fully cooked, ensuring they stay tender.
  4. Add the sauce and finish cooking. Pour the prepared sauce over the shrimp and vegetables. Continue cooking, tossing frequently, until the shrimp is fully cooked through and the sauce thickens and coats the shrimp and veggies nicely, about 4 minutes.
  5. Serve. Plate the stir-fry alone or over cooked rice as desired. Drizzle with chili oil if you want extra heat and flavor.
