These fudgy almond butter blondies are made with coconut flour, naturally sweetened with coconut sugar and pure maple syrup, and take just 30 minutes to make in one bowl. They are paleo, gluten free, and deliver a deliciously rich and chewy treat perfect for any occasion.

Ingredients

Main Ingredients

  • 1 cup creamy, drippy natural almond butter (just roasted almonds)
  • 2 eggs
  • ½ cup coconut sugar
  • ¼ cup pure maple syrup
  • 1 tablespoon melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup chocolate chips, plus 2 tablespoons for sprinkling on top
  • Fancy sea salt, for sprinkling on top

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper and spray it with nonstick cooking spray to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, whisk together the almond butter, eggs, coconut sugar, pure maple syrup, melted coconut oil, and vanilla extract until the mixture is smooth and well combined.
  3. Add Dry Ingredients: Gently fold in the coconut flour, baking soda, salt, and ½ cup of chocolate chips into the wet mixture, mixing just until incorporated.
  4. Fill Pan and Top: Transfer the dough to the prepared baking pan and spread it evenly towards the edges. Sprinkle 2 tablespoons of chocolate chips and a pinch of fancy sea salt evenly over the top.
  5. Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center comes out somewhat clean, indicating the blondies are baked through but remain fudgy.
  6. Cool and Serve: Allow the blondies to cool in the pan for 15-20 minutes before cutting into 16 equal squares. Enjoy your delicious almond butter blondies!

Notes

  • Use a drippy natural almond butter made from just roasted almonds to ensure the correct consistency in the blondies.
  • For a vegan option, try replacing the eggs with 2 flax eggs, though this has not been personally tested by the author.
  • Be careful not to overbake to maintain the fudgy texture.
  • These blondies store well in an airtight container at room temperature for several days or can be refrigerated for longer freshness.
