Delicious and refreshing Frozen Yogurt Granola Cups, perfect for a quick and healthy snack or breakfast. These cups combine crunchy granola with creamy Greek yogurt and fresh berries, then are frozen to create a tasty treat that balances texture and flavor.

Ingredients

Granola Base

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 34 tbsp honey (depending on desired sweetness)
  • 1 tsp vanilla extract

Filling and Topping

  • 1 1/2 cups Greek yogurt*
  • Berries of choice to top

Instructions

  1. Prepare Granola Dough: In a mixing bowl, combine oats, cinnamon, almond butter, honey, and vanilla extract. Stir well until a sticky dough forms. If it feels too dry, gradually add more almond butter and honey to achieve a cohesive texture.
  2. Form Granola Cups: Line a muffin pan with muffin liners. Spoon the granola dough into the bottom of each liner and press firmly with your fingers to create a sturdy, compact base.
  3. Add Yogurt and Toppings: Spoon a generous amount of Greek yogurt into each granola base, then top with fresh berries and any remaining granola mixture for added crunch and flavor.
  4. Freeze to Set: Place the assembled muffin pan in the freezer and let it set for at least 4 hours until the cups are firm. Before serving, allow to thaw slightly for a creamy texture.

Notes

  • Use thick Greek yogurt for best results; if you prefer a dairy-free option, substitute with coconut or almond-based yogurt.
  • Adjust honey quantity according to how sweet you want your granola cups.
  • These cups can be stored in the freezer for up to one week.
  • For extra texture, consider adding nuts or seeds to the granola base.
