Ingredients

Crust:

  • 2 ⅛ cups all-purpose flour
  • ½ teaspoon cream of tartar
  • ½ teaspoon baking soda
  • ½ cup white sugar
  • ½ cup confectioners’ sugar
  • ½ cup unsalted butter, softened
  • ½ cup vegetable oil
  • 1 large egg
  • ½ teaspoon vanilla extract

Filling:

  • 1 (8 ounce) package cream cheese, softened
  • ⅓ cup white sugar
  • ½ teaspoon vanilla extract

Fruit:

  • 3 cups fresh strawberries, hulled and halved
  • 1 cup fresh blueberries, rinsed and dried
  • 3 kiwifruit, peeled and thinly sliced

Glaze:

  • ¼ cup white sugar
  • 1 tablespoon cornstarch
  • ½ cup water
  • ½ cup orange juice
  • 2 tablespoons lemon juice

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350 degrees F (175 degrees C). Grease a 10×15-inch jelly roll pan to ensure the crust does not stick.
  2. Make the Crust: In a mixing bowl, sift together the all-purpose flour, cream of tartar, and baking soda. In a separate large bowl, using an electric mixer, beat the white sugar, confectioners’ sugar, softened butter, vegetable oil, egg, and vanilla extract until creamy. Gradually add the flour mixture to the wet ingredients and mix until well blended. Spread this dough evenly over the bottom of the prepared pan.
  3. Bake the Crust: Place the pan in the preheated oven and bake for 10 to 12 minutes, or until the crust is golden brown. Remove from the oven and allow it to cool completely, approximately 30 minutes.
  4. Prepare the Filling: In a bowl, beat the softened cream cheese, white sugar, and vanilla extract until smooth and creamy.
  5. Assemble Fruit Layer: Spread the cream cheese filling evenly over the cooled crust. Arrange the fresh strawberries, blueberries, and sliced kiwifruit decoratively over the filling. Place in the refrigerator while preparing the glaze.
  6. Make the Glaze: In a small saucepan, stir together sugar and cornstarch. Whisk in water, orange juice, and lemon juice. Bring the mixture to a boil over medium heat, then boil gently for 1 minute. Remove from heat and allow the glaze to cool completely for 20 to 30 minutes.
  7. Glaze the Fruit: Spoon or brush the cooled glaze evenly over the arranged fruit to give a shiny finish and preserve freshness.
  8. Chill Before Serving: Refrigerate the finished flan for at least 1 hour to set the glaze and flavors before serving.
