Ingredients

Base Layer

  • 1 (15 ounce) can refried beans (vegetarian if preferred)

Taco Yogurt Layer

  • 3 (5.3 ounce) containers or 2 cups plain yogurt
  • 1 (1 ounce) packet taco seasoning*

Guacamole Layer

  • 2 medium avocados
  • 23 tablespoons chopped cilantro
  • 1 jalapeño, seeded and diced
  • ½ lime, juiced
  • Salt and pepper to taste

Remaining Toppings

  • ½ cup shredded cheddar or Mexican cheese
  • 1 ½ cups quartered grape tomatoes
  • ¼ cup sliced black olives
  • 2 tablespoons finely diced red onion or green onion
  • ½ cup chopped fresh cilantro
  • Optional: jalapeño slices for garnish

Instructions

  1. Prepare the Base Layer: Spread the refried beans evenly across the bottom of a 9×9 inch pan to create the foundational layer of the dip.
  2. Make the Taco Yogurt Layer: In a medium bowl, combine the plain yogurt with the taco seasoning packet, stirring well until fully mixed. Spread this creamy, flavorful mixture evenly on top of the refried beans layer.
  3. Prepare the Guacamole: In another bowl, mash the avocados to a texture that is partially smooth and partially chunky. Stir in the chopped cilantro, diced jalapeño, lime juice, and season with salt and pepper to taste. Spread the guacamole carefully over the yogurt layer.
  4. Add Remaining Toppings: Layer the shredded cheese over the guacamole, followed by the quartered grape tomatoes. Next, scatter the sliced black olives, diced onion, and chopped cilantro. Garnish with jalapeño slices if desired for extra heat and visual appeal.
  5. Chill and Serve: Cover the dip with plastic wrap and refrigerate until ready to serve. For best flavor and freshness, prepare the dip the day of serving, but it can be made up to 24 hours ahead. Serve chilled with tortilla chips, plantain chips, pita chips, or fresh vegetable sticks like carrots, celery, or cucumber.
