A quick and easy vegetarian kidney bean chili made with walnuts, bell pepper, mushrooms, and spices. This flavorful and hearty chili is perfect for a nutritious weeknight dinner and can be prepared in just 30 minutes on the stovetop.

Ingredients

Vegetables & Beans

  • 1 red bell pepper, cut into a few pieces
  • 150 g (~5 oz) mushrooms
  • 1 small red onion (or 1/2 large), cut into a few pieces
  • 400 g can kidney beans, drained (240 g, or ~1 1/4 cups, when drained)
  • 400 g can (~1 1/3 cups) chopped tomatoes

Nuts

  • 50 g (~1/2 cup) walnuts

Spices & Seasonings

  • 2 teaspoons mild chilli powder
  • 1 teaspoon minced garlic
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste

Instructions

  1. Prepare Ingredients: Add the walnuts to a food processor, along with the roughly chopped red bell pepper, mushrooms, and red onion.
  2. Chop Mixture: Blitz the mixture for a few seconds until roughly chopped. It’s fine if the pieces vary in size as this adds texture to the chili.
  3. Combine in Saucepan: Transfer the chopped mixture to a saucepan. Add the drained kidney beans, chopped tomatoes, mild chilli powder, minced garlic, smoked paprika, and ground cumin. Mix everything well to combine the ingredients evenly.
  4. Simmer the Chili: Set the heat to medium and bring the mixture to a gentle simmer. Cover the pan and let it cook for at least 20 minutes, stirring occasionally to prevent sticking and to blend flavors. Cooking longer is beneficial if possible.
  5. Season and Serve: Season the chili with salt and pepper to taste. Serve warm with your preferred sides or toppings such as rice, sour cream, or chopped fresh herbs.

  • Using walnuts adds a nice texture and a boost of protein to this vegetarian chili.
  • Adjust the amount of chili powder to suit your preferred spice level.
  • This chili can be served with rice, tortilla chips, or crusty bread.
