Ingredients

Ganache

Instructions

  1. Make the ganache: In a small saucepan over medium heat, bring 1 cup of heavy cream to a simmer. Once simmering, remove from heat and stir in 2 cups of chocolate chips until completely smooth. Transfer the mixture to the refrigerator and chill for about 1 hour until it reaches a spoon-able consistency. Then, use a hand mixer to beat the ganache until soft peaks form. If refrigerating again, the ganache will stiffen.
  2. Prepare the waffle batter: Using a hand mixer, beat 1/2 cup softened salted butter and 3/4 cup granulated sugar together until creamy, approximately 2 minutes. Add 1 cup buttermilk, 1 egg, and 1 teaspoon vanilla extract; mix until fully combined. Gradually add 1 3/4 cups all-purpose flour and 2 teaspoons baking powder on low speed, mixing just until incorporated. Scrape the bowl’s sides and bottom to ensure even mixing.
  3. Cook the waffles: Preheat a Belgian waffle maker according to the manufacturer’s instructions. Scoop a heaping 2/3 cup of batter onto the waffle iron for each waffle. Cook waffles one at a time until golden and cooked through. Transfer cooked waffles to a wire rack to cool completely before assembly.
  4. Assemble the cake: Layer at least 4 cooled waffles by spreading a generous amount of whipped ganache between each waffle. Stack the waffles to form a cake. Garnish the top and sides of the cake with fresh strawberries or raspberries if desired.
