This Easy Summer Fruit Puff Pastry Tart is a delightful and quick dessert featuring a crispy puff pastry base layered with fresh summer fruits, lightly brushed with butter and dusted with cinnamon sugar. Perfect for warm-weather gatherings, it pairs beautifully with whipped cream or ice cream for a refreshing treat.

Ingredients

Puff Pastry:

  • 1 sheet store-bought puff pastry

Fruit Topping:

  • 3 cups fresh fruit, sliced (such as berries, peaches, or nectarines)

Topping and Finish:

  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar
  • ⅛ teaspoon ground cinnamon (optional, or substitute with ginger or cardamom)
  • Whipped cream or ice cream, for serving (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C). Line a sheet pan with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Prepare Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet into approximately a 9-inch by 12-inch rectangle. Transfer this to the prepared sheet pan. Fold the edges inward about ½ inch to form a raised border which will keep the fruit juices from spilling over while baking.
  3. Arrange Fruit and Add Toppings: Lay the sliced fresh fruit evenly on the puff pastry inside the folded border, making sure to spread the fruit in a single layer. Brush the melted butter gently over both the fruit and the exposed dough edges. In a small bowl, mix granulated sugar with ground cinnamon or your preferred spice, then sprinkle this mixture evenly over the entire tart.
  4. Bake the Tart: Place the sheet pan in the preheated oven and bake for about 25 minutes, or until the pastry edges turn golden brown and puffed. The fruit should be tender and slightly caramelized.
  5. Cool and Serve: Allow the tart to cool for a few minutes after baking to set. Slice into portions and serve warm or at room temperature, optionally topped with whipped cream or a scoop of ice cream. This tart is best enjoyed the same day it is made for optimal puff pastry crispness.

Notes

  • You can use a variety of fresh summer fruits such as strawberries, blueberries, peaches, nectarines, or cherries for this tart.
  • For a different spice profile, try ginger or cardamom instead of cinnamon.
  • The tart is best served the same day to maintain puff pastry crispness.
  • If puff pastry softens after storing, reheat briefly in the oven to restore crispness.
