Ingredients

Crust

  • 25 chocolate sandwich cookies (such as Oreos)
  • 5 tbsp salted butter, melted

Filling

  • 1 cup creamy peanut butter
  • 1 (8-ounce) package cream cheese, softened
  • 1 1/4 cups powdered sugar
  • 8 oz whipped topping (such as Cool Whip), thawed

Instructions

  1. Prepare the crust: Preheat your oven to 350˚F (175˚C). Place the chocolate sandwich cookies into a food processor and process for about 1 minute until finely crushed. Transfer the crumbs to a bowl, pour the melted butter over them, and mix thoroughly with a fork to combine.
  2. Form and bake the crust: Press the cookie and butter mixture firmly into the bottom and up the sides of a pie plate to form the crust. Bake for 5 to 7 minutes until it sets. Remove from the oven and allow it to cool completely.
  3. Make the filling: In the bowl of a stand mixer fitted with a whisk attachment, beat the peanut butter together with softened cream cheese until smooth and creamy. Gradually add the powdered sugar and continue beating until fully blended. Finally, fold in the thawed whipped topping and beat until the mixture is smooth, scraping down the sides of the bowl as needed.
  4. Assemble and chill: Pour the peanut butter filling into the cooled cookie crust and smooth the top evenly with a spatula or knife. Cover and chill in the refrigerator for at least 4 hours to allow the pie to set before serving.
