Ingredients

Turkey and Aromatics

  • 1 12-20 pound turkey
  • 1 onion, peeled and quartered
  • 1 lemon, quartered
  • 1 apple (your favorite kind), quartered

Herbs

  • 0.75 ounce container fresh rosemary
  • 0.75 ounce container fresh thyme
  • 0.75 ounce container fresh sage

Herb Butter

  • 1 cup unsalted butter, softened
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 68 cloves garlic, minced
  • Fresh chopped herbs (from containers above)

Instructions

  1. Thaw the Turkey: If your turkey is frozen, thaw it in the refrigerator for 24 hours per 5 pounds of bird weight, plus an extra day for safety.
  2. Bring to Room Temperature: Remove the turkey from the fridge about 1 hour before roasting to allow it to come to room temperature for more even cooking.
  3. Preheat Oven and Adjust Rack: Position an oven rack in the center of your oven and preheat to 325 degrees Fahrenheit.
  4. Prepare Herb Butter: Combine softened butter, minced garlic, salt, pepper, one tablespoon each fresh chopped rosemary and thyme, and half a tablespoon fresh chopped sage in a bowl. Reserve remaining herbs for the turkey cavity.
  5. Prepare Turkey: Remove turkey from packaging and remove neck and giblets from cavities (save for gravy or discard). Pat turkey dry thoroughly with paper towels.
  6. Season and Stuff the Turkey: Season the cavity with salt and pepper. Stuff with quartered lemon, onion, apple, and leftover fresh herbs for added flavor.
  7. Apply Herb Butter Under Skin: Gently loosen skin over the breasts and smooth several tablespoons of herb butter underneath for moist, flavorful meat.
  8. Tuck Wings and Place Turkey on Rack: Tuck the wings under the body to prevent burning and place the turkey breast-side up on a roasting rack in a roasting pan.
  9. Brush Remaining Herb Butter: Microwave remaining herb butter for 30 seconds to soften. Use a basting brush to coat the outside of the turkey, including legs and wings, with the herb butter.
  10. Roast the Turkey: Roast the turkey at 325°F for approximately 13-15 minutes per pound. Check internal temperature in the thickest part of thigh and breast; it should reach around 165°F.
  11. Protect Turkey Skin: About halfway through roasting, when the skin turns golden brown, tent the top with foil to prevent overbrowning and drying of the breast meat. Alternatively, start with foil tented and remove during last hour to brown.
  12. Rest the Turkey: Once done, tent the turkey loosely with foil and let it rest for 20-30 minutes on the counter to allow juices to redistribute before carving.
  13. Carve and Use Pan Drippings: Move turkey to a cutting board inside a sheet pan to catch juices while carving. Reserve drippings to make a flavorful turkey gravy.
