  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1 cup heavy/whipping cream
  • 1 tablespoon tomato paste
  • 1/3 cup sun-dried tomatoes (drained and chopped if packed in oil)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/3 cup freshly grated parmesan cheese
  • 1 small handful fresh basil (chopped or torn)

Instructions

  1. Prepare the Chicken: Cut the chicken breasts in half lengthwise to create four thinner pieces. Season each piece with garlic powder, salt, and pepper evenly on both sides.
  2. Heat Skillet and Cook Chicken: Add butter and olive oil to a skillet over medium-high heat and allow it to heat up for a few minutes. Place the chicken pieces in the skillet and cook for about 5-6 minutes on each side until golden brown and cooked through (internal temperature of 165°F). Once cooked, transfer the chicken to a plate and loosely cover with foil to keep warm while you prepare the sauce.
  3. Make the Sauce Base: With the skillet still on medium heat, add the flour and minced garlic to the hot pan. Stir continuously for about one minute to cook off the raw flour taste and garlic fragrance.
  4. Deglaze the Pan: Pour in the white wine (or chicken broth if preferred) and whisk thoroughly to dissolve the flour, scraping any browned bits from the bottom. Allow the liquid to simmer and reduce by half to intensify the flavor.
  5. Add Cream and Flavorings: Stir in the heavy cream, tomato paste, sun-dried tomatoes, dried oregano, and crushed red pepper flakes. Reduce the heat to low and let the sauce simmer gently until it thickens to your desired consistency, stirring occasionally. Adjust heat as needed to prevent rapid boiling.
  6. Finish the Sauce: Remove the skillet from the heat and stir in the freshly grated parmesan cheese and torn basil leaves, allowing the residual heat to melt the cheese and release the basil aroma.
