  • 2 cups fresh Italian basil leaves (approx 4 oz), washed and drained
  • 2 whole peeled garlic cloves
  • 1/4 cup freshly squeezed lemon juice (or lime juice)
  • 1/2 cup extra virgin olive oil
  • 1012 whole black peppercorns
  • 1/2 teaspoon salt

Instructions

  1. Prepare The Basil: Remove the basil leaves from their stems, discard the stems, and measure out 2 cups of lightly packed leaves (approximately 4 ounces). Wash the leaves thoroughly with water to remove any dirt or impurities, then drain excess water well using a salad spinner or by patting dry.
  2. Make The Dressing: Place the prepared basil leaves, peeled garlic cloves, freshly squeezed lemon juice, extra virgin olive oil, whole black peppercorns, and salt into the small jar of a blender or food processor. Blend the ingredients for about 60 seconds until the basil and garlic are fully integrated with the liquid ingredients, yielding a smooth vinaigrette.
  3. Adjust For Blender Size: If using a food processor or blender with a large jar, consider doubling the recipe to allow proper blending, as too small a batch may not process evenly, especially with wide blades such as in a Vitamix.
  4. Store and Serve: Transfer the vinaigrette into a clean glass jar, seal tightly, and refrigerate for up to one week or freeze for up to four months. Always mix well before each use to recombine the ingredients.
