These Easy Homemade Pop Tarts feature flaky pie crust filled with your favorite jam and topped with a simple vanilla glaze. They are baked to golden perfection in just 35 minutes, making them a delightful homemade treat that’s perfect for breakfast or a snack.

Ingredients

Pie Crust

  • 1 package rolled pie crust (2 count, 7.5 oz total)

Filling

  • 1 cup plus 2 tablespoons jam or preserves (any flavor)

Egg Wash

  • 1 large egg (beaten)

Glaze

  • 1 cup powdered sugar
  • 23 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons jam (optional, for glaze)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  2. Prepare Pie Crust Rectangles: Unroll one sheet of the pie crust onto a sheet of parchment paper. Using a 3 by 5 inch guide (such as an index card), cut as many rectangles as possible. Gather the leftover dough, knead it together, and roll out to just under 1/4 inch thick to cut additional rectangles.
  3. Assemble Pop Tarts: Lay 8 dough rectangles on the prepared baking sheet. Spoon about 1 1/2 tablespoons of jam onto each rectangle, spreading it within the edges. Brush the edges of each rectangle with the beaten egg wash. Place another dough rectangle on top of the jam-covered one, gently pinching and crimping the edges with a fork to seal. Use a fork or knife to poke a few holes on the top dough to allow steam to escape. Brush the entire top and edges with more egg wash.
  4. Bake: Bake the pop tarts in the preheated oven for 12-15 minutes or until they turn golden brown and puffed up.
  5. Prepare Glaze and Decorate: Once the pop tarts are completely cooled, whisk together powdered sugar, milk or cream, and vanilla extract until smooth. Optionally, mix in 2 tablespoons of jam for a flavored glaze. Spread the glaze over each pop tart and decorate with sprinkles, crushed freeze-dried berries, or edible rose petals as desired.
  6. Store: Store the finished pop tarts in an airtight container. They are best enjoyed fresh, but can be stored for up to 2 days.
