Ingredients

For the Beef Filling

  • 1 lb lean or extra lean ground beef
  • 1 onion, diced
  • 2 tsp chili powder
  • 1½ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp kosher salt
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp oregano
  • 1 cup water

For the Tacos

  • 10 extra thin corn tortillas (Mission Brand recommended)
  • ¾ cup reduced fat Mexican cheese blend
  • Olive oil spray
  • Optional toppings: salsa, pico de gallo, sour cream, lettuce

Instructions

  1. Preheat Oven: Set your oven to 450℉ to ensure it’s fully heated and ready to crisp the tacos later.
  2. Soften Tortillas: Wrap the corn tortillas in a damp paper towel and microwave for 30 seconds to 1 minute. This step softens the tortillas, making them pliable and preventing tearing while filling.
  3. Cook Ground Beef and Onion: Spray a large frying pan lightly with olive oil. Add diced onion and ground beef, breaking the meat apart with a wooden spoon. Cook over medium-high heat until beef is no longer pink and onions are soft.
  4. Add Spices and Simmer: Combine all spices (chili powder, cumin, paprika, kosher salt, garlic powder, onion powder, oregano) into a blend. Stir the spice mix into the cooked beef thoroughly. Pour in 1 cup of water and allow the mixture to simmer on medium heat for about 10 minutes until most liquid evaporates and the filling remains moist.
  5. Prepare Baking Sheet and Fill Tacos: Spray a large baking sheet with olive oil spray. Lay out the softened tortillas on the sheet. Sprinkle about 2 tablespoons of the reduced-fat cheese on each tortilla.
  6. Assemble Tacos: Add a heaping ¼ to ⅓ cup of the beef filling onto one side of each tortilla. Fold the tortillas over the filling to close, and press firmly to secure the filling inside.
  7. Spray and Secure Tacos: Lightly spray the tops of the folded tacos with olive oil spray and sprinkle a pinch of kosher salt over them. Place a heavy baking dish or cast iron skillet on top of the tacos to keep them flat while baking.
  8. Bake to Crisp: Bake the tacos in the oven at 450℉ for 10 minutes or until the tortillas are golden and crispy, and the cheese has melted. Flip them halfway through baking if necessary for even crisping.
  9. Serve: Remove from oven and serve warm with your choice of salsa, pico de gallo, sour cream, or lettuce for a fresh finish.
