These Easy Garlic Parmesan Cheeseburger Bombs are a delicious, cheesy snack or appetizer featuring a savory ground beef and cheese filling wrapped in flaky biscuit dough, brushed with a flavorful garlic butter and Parmesan topping, then baked to golden perfection in just 27 minutes.

Ingredients

Filling

  • 1 lb ground beef
  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • ½ cup grated parmesan cheese
  • 1 cup cheddar cheese, freshly grated

Dough & Topping

  • 1 can (16.3 oz) biscuit dough
  • 2 tbsp melted butter
  • 1 tbsp parsley, finely chopped
  • ½ tsp garlic powder
  • 2 tbsp grated parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
  2. Cook Filling: In a large skillet over medium-high heat, cook the ground beef with the diced onion and minced garlic until the meat is browned and onions are soft. Drain excess fat, then season generously with salt and black pepper to taste.
  3. Add Cheeses: Stir in ½ cup grated Parmesan and 1 cup freshly grated cheddar cheese into the beef mixture until melted and combined, creating a rich cheesy filling.
  4. Prepare Dough: Take each biscuit from the can and gently flatten it into a round disc using your hands or a rolling pin.
  5. Fill Biscuits: Spoon a portion of the beef and cheese mixture onto the center of each biscuit disc, then fold the dough over the filling. Pinch edges tightly to seal completely, ensuring no filling escapes during baking.
  6. Make Garlic Butter Topping: In a small bowl, combine 2 tablespoons melted butter, garlic powder, finely chopped parsley, and 2 tablespoons grated Parmesan cheese.
  7. Arrange and Brush: Place the filled biscuit bombs on the prepared baking sheet. Brush the tops generously with the garlic butter and Parmesan mixture to add flavor and help achieve a golden crust.
  8. Bake: Bake in the preheated oven for 12–15 minutes until the biscuits are puffed, golden brown, and cooked through.
  9. Serve: Remove from the oven and let cool slightly. Garnish with extra parsley and Parmesan cheese if desired. Serve warm as a hearty snack or appetizer.

Notes

  • For best results, use freshly grated cheese rather than pre-shredded for better melting and flavor.
  • Make sure to pinch the edges of the dough tightly to prevent filling leakage during baking.
  • You can customize the filling by adding diced jalapeños or cooked bacon for extra heat and smokiness.
  • Leftovers can be stored in an airtight container in the refrigerator and reheated in the oven to retain crispness.
