Ingredients

Steak

  • 1.5 pounds sirloin steak (or ribeye, strip steak, or another tender well-marbled cut)
  • Salt & pepper, to taste
  • 1 tablespoon olive oil

Garlic Butter Sauce

  • 4 tablespoons butter (1/2 stick), divided
  • 45 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Prepare the Steak: Remove the steak from the refrigerator and let it sit at room temperature for 30 minutes to ensure even cooking.
  2. Cut and Season: Slice the steak into 1-inch cubes and generously season them with salt and pepper to enhance the flavors.
  3. Cook the Steak Bites: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. When hot, add the steak cubes in a single layer without crowding the pan (cook in two batches if needed). Sear for about 2 minutes on each side to achieve medium doneness, avoiding moving the meat to get a good crust. Transfer cooked steak to a plate and repeat with the second batch.
  4. Make Garlic Butter Sauce: Reduce heat to medium-low. Add remaining butter and minced garlic to the skillet, stirring almost constantly for 1-2 minutes until the garlic is fragrant but not burnt.
  5. Combine and Serve: Remove the pan from heat. Return the steak bites and any accumulated juices to the skillet and toss to coat well in the garlic butter sauce. Sprinkle with chopped fresh parsley and serve immediately.
