Ingredients

Cookie Base

  • 16 oz refrigerated cookie dough (softened at room temperature for 1 hour)

Cream Cheese Frosting

  • 8 oz cream cheese (softened to room temperature)
  • 2 Tbsp unsalted butter (softened to room temperature)
  • 2 tsp vanilla extract
  • 2 cups powdered sugar

Fruit Topping

  • 1 ½ cups sliced strawberries
  • 2 kiwis (skin removed and sliced)
  • ½ cup blueberries
  • 9 oz canned mandarin orange sections (drained and pat dry with a paper towel)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Prepare a round pizza pan by spraying it with non-stick cooking spray or lining it with parchment paper to prevent sticking.
  2. Prepare the Cookie Crust: Allow the refrigerated cookie dough to soften at room temperature for about 1 hour. Once softened, use your hands to press the dough evenly into the pizza pan, shaping it to fit the pan’s surface. Bake for approximately 15 minutes until the crust is golden brown. Remove from the oven and allow it to cool completely before adding any toppings or frosting.
  3. Make the Cream Cheese Frosting: In a large mixing bowl, combine the softened cream cheese, unsalted butter, powdered sugar, and vanilla extract. Use a hand mixer to beat the ingredients, initially clumpy but continue mixing for 2-3 minutes until the frosting becomes smooth and creamy.
  4. Frost the Cookie Crust: Spread the prepared cream cheese frosting evenly over the cooled sugar cookie crust using a spatula, leaving a small border around the edges to showcase the cookie.
  5. Arrange the Fruit: Wash and slice the strawberries, peel and slice the kiwis, and drain and pat dry the canned mandarin orange sections. Arrange all fruit pieces on top of the frosting in concentric circles starting from the outer edge toward the center, creating a colorful and appealing pattern.
