Ingredients

Egg Mixture

  • 6 large eggs
  • 1/3 cup heavy whipping cream
  • 1/2 tsp salt (adjust to taste)

Vegetables & Greens

  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup bell pepper (red, orange, or yellow), diced
  • 1 cup arugula

Cheeses

  • 1 cup shredded mozzarella cheese
  • 1/2 cup goat cheese (optional)

Other

  • 1 tbsp unsalted butter
  • Fresh herbs (optional for garnish)

Instructions

  1. Preheat and whisk eggs: Preheat your oven to 400°F (200°C). In a bowl, whisk together the eggs, heavy whipping cream, and salt until the mixture is smooth and uniform in texture. Set aside.
  2. Prepare skillet and vegetables: Melt the butter and use it to coat the sides and bottom of a cast-iron skillet or an oven-safe baking dish. Evenly spread the halved cherry tomatoes, diced bell peppers, and arugula over the base of the pan.
  3. Combine and bake: Pour the egg mixture evenly over the vegetables and greens. Sprinkle shredded mozzarella cheese and goat cheese over the top. Use a fork to gently distribute the cheese into the eggs for even melting. Bake in the preheated oven for 15 to 17 minutes, or until the edges and center are fully set and the top turns golden brown. The internal temperature should reach 160°F to ensure it is cooked through.
  4. Serve: Remove the frittata from the oven, let it cool slightly, garnish with fresh herbs if desired, and serve warm.

Notes

  • You can substitute or add any vegetables you like such as spinach, mushrooms, or zucchini.
  • For a lighter version, replace heavy cream with milk or a dairy-free alternative.
  • Using a cast-iron skillet helps achieve a perfect crust but any oven-safe baking dish will work.
  • The goat cheese is optional but adds a nice tangy flavor.
  • Make sure not to overcook the frittata to keep it moist and tender.
