Ingredients

Fruit

  • 2 Large Apples

Wet Ingredients

  • 2 Eggs (at room temperature)
  • 120 gr (1/2 cup) Unsalted Butter (melted)
  • 120 gr (1/2 cup) Applesauce (preferably unsweetened)

Dry Ingredients

  • 80 gr (1/3 cup) Brown Sugar
  • 150 gr (1 cup) Plain / All-Purpose Flour
  • 1 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Ground Cinnamon (optional)
  • 1 pinch Salt

Optional Toppings

  • Flaked Almond (optional, to taste)
  • Raw Sugar (optional, to taste)

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 180°C (350°F). Line the bottom of a 24 cm (9-inch) springform pan with parchment paper and lightly grease the sides to prevent sticking.
  2. Melt butter: Melt the unsalted butter in the microwave and set it aside to cool to room temperature.
  3. Prepare apples: Peel, core, and dice the apples into small cubes. Set aside for folding into the batter later.
  4. Whisk eggs and sugar: In a large mixing bowl, whisk the eggs and brown sugar together until the mixture becomes foamy and slightly pale, incorporating air for a light texture.
  5. Add wet ingredients: Pour the cooled melted butter and applesauce into the egg-sugar mixture and whisk until everything is combined smoothly.
  6. Incorporate dry ingredients: Add the flour, baking powder, ground cinnamon (if using), and salt into the wet mixture. Mix using a whisk or spatula just until combined to avoid overworking the batter.
  7. Fold in apples: Gently fold the diced apples into the batter evenly, ensuring they are well-distributed without crushing them.
  8. Prepare to bake: Pour the batter into the prepared springform pan and spread it out evenly. Optionally, sprinkle flaked almonds and raw sugar on top for added texture and sweetness.
  9. Bake: Place the pan in the preheated oven and bake for 30 to 35 minutes or until a skewer inserted into the center comes out clean, indicating the cake is cooked through.
  10. Cool and serve: Allow the cake to cool completely in the pan before removing the sides of the springform and serving. This helps the cake set nicely for clean slices.

Notes

  • Using unsweetened applesauce keeps the sweetness balanced while adding moisture.
  • Be careful not to overmix the batter after adding the flour to avoid a dense cake.
  • Folding in the apples gently preserves their texture in the cake.
  • Flaked almonds and raw sugar on top add a nice crunchy contrast if desired.
