This easy Cottage Cheese Alfredo recipe offers a lighter, creamy twist on classic Alfredo sauce by using low-fat cottage cheese combined with Parmesan and fresh spinach. Ready in just 25 minutes, this comforting pasta dish is perfect for a quick and nutritious dinner that doesn’t sacrifice flavor.

Ingredients

Pasta

  • Kosher salt
  • 8 oz. dry fettuccine
  • 1 tbsp. extra-virgin olive oil

Sauce

  • 1 1/4 cups low-fat cottage cheese
  • 1 cup 2% milk
  • 1 oz. Parmesan, shredded (about 1/3 cup packed)
  • 2 small cloves garlic, finely chopped
  • 3 tbsp. unsalted butter, softened
  • 1 tbsp. all-purpose flour

Additional

  • 3 oz. baby spinach
  • Crushed red pepper flakes, for topping

Instructions

  1. Cook the Pasta: In a large pot of boiling salted water, cook fettuccine, stirring occasionally, until very al dente—about 1 minute less than the package instructions. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and transfer it to a large bowl. Add the extra-virgin olive oil and toss to combine, preventing the pasta from sticking.
  2. Prepare the Alfredo Sauce: In a blender or food processor, pulse together cottage cheese, milk, Parmesan, garlic, softened butter, flour, and 1 teaspoon kosher salt until the mixture is smooth and creamy. Transfer this sauce to a large skillet and bring to a simmer over medium heat. Cook while stirring frequently with a heatproof spatula until the sauce thickens, about 8 to 10 minutes. Add baby spinach to the skillet and stir until wilted, incorporating it evenly into the sauce.
  3. Toss Pasta with Sauce: Add the cooked fettuccine to the skillet with the Alfredo sauce and toss well to coat all the noodles. If the sauce thickens too much, gradually add some reserved pasta water to loosen and achieve your desired consistency.
  4. Serve: Divide the creamy cottage cheese Alfredo pasta among serving bowls and finish with a sprinkle of crushed red pepper flakes for a mild kick and extra flavor.

Notes

  • For an even creamier sauce, use full-fat cottage cheese, or substitute with ricotta if preferred.
  • Adjust the amount of crushed red pepper flakes to taste for more or less heat.
  • Use gluten-free pasta to make this recipe gluten-free.
  • Stir the sauce constantly while simmering to avoid burning and ensure a smooth texture.
  • Reserved pasta water contains starch that helps thicken and bind the sauce to the pasta.
