Perfect for autumn or any time you crave a comforting, homemade cake, it combines simple ingredients like fresh apples, cinnamon, and coconut oil to create a delicious treat that pairs wonderfully with whipped cream.

Ingredients

Apple Mixture

  • 4 cups sliced apples (about 34 apples, peeling optional)
  • 1 tablespoon fresh lemon juice
  • 2 cups white sugar

Wet Ingredients

  • 3/4 cup coconut oil (or avocado oil)
  • 2 large eggs
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 cups all purpose flour
  • 1 ½ teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • ¼ teaspoon ground cloves

Instructions

  1. Prepare the apples: Peel and core about 4 apples, then slice them into approximately 1/4 inch thick slices. Place the slices into a large bowl, sprinkle 2 cups of white sugar over the apples, and toss gently with your hands. Add 1 tablespoon of fresh lemon juice and let the mixture sit for 30-45 minutes to soften the apples and dissolve the sugar.
  2. Preheat the oven: Set your oven temperature to 350°F (175°C) to ensure it’s ready for baking the cake.
  3. Combine wet ingredients with apple mixture: Add 3/4 cup coconut oil, 2 large eggs, and 2 teaspoons of vanilla extract to the apple mixture. Stir well with a spoon until the ingredients are fully incorporated.
  4. Mix dry ingredients: In a separate bowl, combine 2 cups all-purpose flour, 1 ½ teaspoons baking soda, 1 teaspoon ground cinnamon, 1/2 teaspoon kosher salt, and ¼ teaspoon ground cloves. Then carefully fold this dry mixture into the apple mixture, stirring just until the flour is incorporated to avoid overmixing.
  5. Prepare the baking pan: Spray a 9×9 or 9×13 inch baking dish with baking spray and line it with parchment paper for easy removal of the cake.
  6. Bake the cake: Transfer the batter into the prepared baking dish and bake in the preheated oven. Bake for 50-55 minutes for a 9×9 pan or 45-50 minutes for a 9×13 pan, or until a knife inserted in the center comes out clean.
  7. Serve: Allow the cake to cool slightly, then serve warm or at room temperature with freshly whipped cream for an extra special touch.

Notes

  • The lemon juice helps prevent the apples from browning and adds brightness to the flavor.
  • You can use coconut oil or avocado oil as a healthier alternative to butter.
  • Letting the apples sit with sugar softens them, ensuring a tender texture in the finished cake.
  • Line the pan with parchment paper for easy removal and cleaner slices.
  • Check doneness by inserting a knife or toothpick into the center; it should come out clean or with just a few moist crumbs.
  • For added flavor, feel free to sprinkle extra cinnamon or nuts on top before baking.
  • This cake pairs wonderfully with whipped cream, vanilla ice cream, or a drizzle of caramel sauce.
