Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the enchiladas later.
  2. Prepare Filling: In a large bowl, combine shredded chicken with ¾ cup of enchilada sauce, 1 cup of shredded cheese, and finely chopped onions if using. Mix well to distribute the ingredients evenly.
  3. Prepare Baking Dish: Spread a thin layer of enchilada sauce over the bottom of a 9×13-inch (23×33 cm) baking dish to prevent sticking and add extra flavor.
  4. Warm Tortillas: Heat a skillet over medium heat and warm each tortilla for about 10 seconds per side until soft and pliable. This makes them easier to roll without cracking.
  5. Fill and Roll Tortillas: Lay each warmed tortilla flat, scoop approximately ¼ to ⅓ cup of the chicken filling onto the center, then fold the edges over the filling and roll tightly. Place each rolled tortilla seam side down into the prepared baking dish.
  6. Add Sauce and Cheese: Drizzle the remaining enchilada sauce evenly over the rolled tortillas, then sprinkle the remaining 1 cup of shredded cheese on top for a bubbly, cheesy finish.
  7. Bake: Place the baking dish on the center rack of the preheated oven and bake for 20-25 minutes until the cheese is melted, bubbly, and the enchiladas are heated through.
