This easy cheeseburger quesadilla recipe combines the irresistible flavors of a smashburger with the crispy, cheesy delight of a quesadilla. It’s a quick and satisfying meal, perfect for a fast dinner that’s both fun and flavorful. Ground beef seasoned with classic spices is pressed directly onto tortillas, cooked until crisp, then layered with cheese, fresh veggies, and burger sauce, folded and cooked again to melty perfection.

Ingredients

Beef Mixture

  • 500 g beef mince
  • 2 teaspoons paprika
  • 1 teaspoon garlic granules
  • 1 teaspoon onion powder
  • 1 teaspoon oregano

Quesadilla Ingredients

  • 4 small-medium tortillas
  • 8 cheddar cheese slices
  • 1 large tomato, thinly sliced
  • 1 baby gem lettuce head, shredded
  • 30 g sliced gherkins
  • ½ red onion, thinly sliced
  • 4 tablespoons burger sauce

Optional

  • 3 onions, caramelized

Instructions

  1. Prepare the Beef Mixture: Place the beef mince in a bowl and add paprika, garlic granules, onion powder, and oregano. Gently mix with your hands until just combined to keep the texture tender.
  2. Form the Beef on Tortillas: Divide the beef mixture into four equal portions. Press each portion onto a tortilla in a thin, even layer to ensure quick, crispy cooking and even browning.
  3. Cook the Beef Side: Heat a non-stick pan over medium heat and lightly spray with oil. Place one or two beef-covered tortillas into the pan, beef side down. Cook for 3 to 4 minutes until the beef is browned and crisp.
  4. Flip the Quesadilla: Carefully flip the tortilla so it’s now tortilla side down. If there is excess grease, remove the quesadilla and wipe the pan quickly before continuing.
  5. Add Filling and Cheese: Reduce heat to medium-low. On the cooked beef side (now facing up), add cheddar cheese slices, thinly sliced red onion, tomato slices, gherkins, and a generous squeeze of burger sauce. Add caramelized onions if using.
  6. Fold and Seal: Let the cheese melt slightly, then fold the tortilla in half to make a quesadilla. Press gently to seal by folding directly in the pan or on a clean surface depending on your texture preference.
  7. Final Cook: Cook the folded quesadilla for an additional 1-2 minutes until the cheese is fully melted and the tortilla is crisp and golden. Remove from the pan.
  8. Serve: Repeat this process with the remaining tortillas. Cut quesadillas into halves or quarters and serve immediately with extra burger sauce or fries as desired.
