Ingredients

Pasta

  • 10 ounces uncooked angel hair pasta

Chicken

  • pounds boneless skinless chicken breast
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • 2 teaspoons Italian seasoning
  • ¼ teaspoon black pepper

Bruschetta Mixture

  • 1½ cups diced tomatoes (about 3 tomatoes)
  • ¼ cup fresh chopped basil
  • 2 teaspoons minced garlic
  • 1 tablespoon balsamic vinegar (optional)
  • Salt and pepper to taste

Garnish (optional)

  • Balsamic glaze
  • Grated parmesan cheese

Instructions

  1. Season the chicken: Lightly pound the boneless skinless chicken breasts to an even thickness of 1 inch to ensure even cooking. Season both sides with ½ teaspoon salt and 2 teaspoons Italian seasoning.
  2. Cook the chicken: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 7-8 minutes, flipping halfway through, until the internal temperature reaches 165°F. Remove the chicken from the skillet and set aside.
  3. Boil the pasta: In a large pot, bring water to a boil and cook 10 ounces of angel hair pasta according to package instructions. Do not drain the pasta; keep it in the hot water until ready to combine.
  4. Prepare the bruschetta mixture: In a medium bowl, combine 1½ cups diced tomatoes, ¼ cup fresh chopped basil, 2 teaspoons minced garlic, and 1 tablespoon balsamic vinegar if using. Stir well and season with salt and pepper to taste.
  5. Combine and cook bruschetta mixture: Add the bruschetta mixture to the same skillet used for cooking the chicken. Stir and cook over medium heat for 1-2 minutes to warm and blend the flavors. Turn off the heat.
  6. Toss pasta: Drain the pasta from the boiling water and add it directly to the skillet with the bruschetta mixture. Toss to coat the noodles evenly, adding additional olive oil if needed for moisture.
  7. Slice and serve: Slice the cooked chicken breasts and arrange them on top of the bruschetta pasta. Garnish with optional balsamic glaze and grated parmesan cheese before serving.
