Finished with a drizzle of balsamic reduction and served with crackers or crostini, this dip combines creamy, tangy, and herbaceous flavors in a quick and simple recipe.

Ingredients

Cheese Base

  • 2 packages (5.3 oz each) Boursin cheese, softened

Bruschetta Topping

  • 1 1/2 cups chopped de-seeded tomatoes (vine-ripened or Roma tomatoes recommended)
  • 1/4 cup packed fresh basil leaves, chopped (plus more for garnish)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, pressed or very finely minced
  • Salt and pepper, to taste

To Serve

  • Balsamic reduction (Alessi brand recommended)
  • Crackers or crostini

Instructions

  1. Soften Boursin: Remove the Boursin cheese packages from the refrigerator and let them sit at room temperature for 15-20 minutes. This slight softening makes it easier to spread the cheese evenly.
  2. Make Bruschetta Mixture: In a small bowl, combine the chopped de-seeded tomatoes, chopped fresh basil, extra virgin olive oil, balsamic vinegar, minced garlic, salt, and pepper. Stir gently to mix all the ingredients thoroughly. Let this mixture rest for 5 minutes to allow the salt to draw out the tomato juices, enhancing the flavor.
  3. Spread Boursin: Transfer the softened Boursin cheese to an 8-9 inch shallow serving dish or pie pan. Using the back of a spoon, spread the cheese into an even layer across the base of the dish.
  4. Top With Bruschetta: Spoon the tomato basil mixture evenly over the spread cheese, leaving any excess juices in the bowl. (These juices can be saved and used as a flavorful dressing over lettuce or sliced cucumbers.)
  5. Drizzle and Garnish: Drizzle the top of the dip with balsamic reduction for a sweet and tangy glaze. Garnish with additional fresh basil leaves to add color and freshness.
  6. Serve: Serve immediately with crackers or crostini alongside a spreading knife for guests to enjoy this easy and delicious dip at your next gathering.

Notes

  • Allowing the Boursin cheese to soften slightly makes spreading much easier and results in a better texture.
  • De-seeding the tomatoes prevents excess liquid from making the dip watery.
  • The bruschetta juice left in the bowl is perfect as a small salad dressing or topping for grilled veggies.
  • For homemade crostini, slice a baguette thinly and toast in the oven until golden and crisp.
  • Use high-quality balsamic vinegar and reduction for the best flavor contrast.
