Ingredients

Cheese & Dairy

  • 8 oz feta cheese (block)

Produce

  • 4 cups cherry tomatoes
  • 2 cloves garlic (minced)
  • 23 tbsp chopped fresh basil

Pantry

  • 1/3 cup olive oil
  • 1/4 tsp red pepper flakes
  • 1/4 tsp oregano
  • 1/4 tsp dried basil
  • 8 oz pasta of your choice

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to get it ready for baking the feta and tomatoes.
  2. Prepare Baking Dish: Place the cherry tomatoes in a baking dish and put the block of feta cheese in the center. Add minced garlic evenly over the tomatoes and feta.
  3. Add Seasonings and Oil: Drizzle olive oil generously over the feta and tomatoes ensuring the feta is well coated. Sprinkle red pepper flakes, dried basil, and oregano over the top for flavor.
  4. Bake Ingredients: Place the baking dish in the oven and bake for 30 to 35 minutes until the feta is golden brown and tomatoes have burst and softened.
  5. Cook Pasta: While the feta and tomatoes bake, boil the pasta in salted water according to package instructions until al dente. Reserve about 1/3 cup of pasta water before draining.
  6. Combine Sauce: Remove the baking dish from oven and stir together the softened tomatoes and baked feta cheese to create a creamy sauce. Add reserved pasta water gradually to thin the sauce to desired consistency.
  7. Toss Pasta: Add the cooked pasta into the baking dish and toss thoroughly to coat the noodles with the baked feta tomato sauce.
  8. Add Fresh Herbs: Stir in chopped fresh basil just before serving for a fresh, aromatic finish.
  9. Serve: Plate the pasta warm and enjoy your easy, flavorful baked feta pasta dish.

Notes

  • You can use any type of pasta such as penne, fusilli, or spaghetti based on your preference.
  • If you prefer a less spicy dish, reduce or omit the red pepper flakes.
  • Reserve some of the pasta water carefully as it helps to create a silkier sauce when mixed in.
  • For added protein, consider topping with grilled chicken or chickpeas.
  • This dish tastes great fresh but can also be reheated gently on the stove or microwave.
