Perfect for breakfast or a sweet snack, it combines the comforting taste of apple cider donuts in a convenient bread form, topped with a spiced sugar coating for that classic donut finish.

Ingredients

Loaf

  • 2 cups (250 g) all-purpose flour
  • 1 ½ cups (300 g) granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons apple pie spice*
  • ½ teaspoon kosher salt
  • 1 ¼ cups apple cider, or apple juice
  • 1 large egg, room temperature
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon vanilla extract

Topping

  • ¼ cup apple cider
  • ½ cup (100 g) granulated sugar
  • 2 teaspoons apple pie spice

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and spray an 8 ½ x 4 ½-inch loaf pan with nonstick cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, apple pie spice, and kosher salt, ensuring they are evenly distributed.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the apple cider, egg, melted butter, and vanilla extract until the mixture is smooth and uniform.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter should remain slightly runny; avoid overmixing to keep the bread tender.
  5. Prepare for Baking: Pour the batter into the prepared loaf pan and spread it evenly across the pan for uniform baking.
  6. Bake: Bake the bread in the preheated oven for 65-75 minutes until a toothpick inserted into the center comes out with just a few moist crumbs and the top turns a golden brown color.
  7. Cool Slightly: Remove the bread from the oven and let it cool in the pan for about 10 minutes.
  8. Add Apple Cider Soak: While the bread is still warm, carefully pour ¼ cup of apple cider evenly over the loaf while still in the pan to soak into the bread.
  9. Prepare Topping: In a small bowl, mix together ½ cup granulated sugar and 2 teaspoons apple pie spice for the topping sugar-spice coating.
  10. Apply Topping: Remove the bread from the pan and place it on a large piece of parchment paper. Sprinkle the sugar-spice mixture evenly over all sides of the bread, rotating it as needed for full coverage.
  11. Cool Completely: Allow the bread to cool completely before slicing to let the flavors set and the topping to adhere properly.

Notes

  • If you don’t have apple pie spice, substitute with ½ teaspoon cinnamon plus ¼ teaspoon allspice. This will approximate the flavor but is not an exact replacement.
