Ingredients

Stew Ingredients

  • 2 lb beef stew meat, prechopped
  • 1 package (1.5 oz) beef stew seasoning mix
  • 1 bag (12 oz) frozen mixed vegetables (preferably with onions)
  • 14 oz baby yellow potatoes
  • 8 oz baby-cut carrots
  • 1 carton (32 oz) Progresso™ beef flavored broth

Thickening Mixture

  • 1/4 cup all-purpose flour

Instructions

  1. Prepare the slow cooker: Spray the slow cooker insert with cooking spray to prevent sticking.
  2. Add ingredients: Place 2 lb of prechopped beef stew meat, 1.5 oz beef stew seasoning mix, 12 oz frozen mixed vegetables (preferably with onions), 14 oz baby yellow potatoes, 8 oz baby-cut carrots, and 32 oz Progresso beef flavored broth into the slow cooker. Stir gently to combine all ingredients evenly.
  3. Cook the stew: Cover the slow cooker and cook on High heat setting for 5 to 6 hours, or on Low heat for 8 to 10 hours, until the beef is tender and vegetables are cooked through.
  4. Thicken the stew: Before serving, remove 1/2 cup of the hot stew broth into a small bowl. Whisk in 1/4 cup all-purpose flour until smooth and lump-free. Pour this mixture back into the stew and stir well until the broth thickens, giving the stew a rich, hearty consistency.

Notes

  • Using prechopped beef stew meat saves prep time.
  • Frozen mixed vegetables with onions add extra flavor and convenience.
  • Adjust cooking time based on your slow cooker model and meat chunk sizes.
  • For a gluten-free version, substitute flour with cornstarch or a gluten-free thickener.
