A refreshing and tangy Cucumber Everything Bagel Salad featuring thinly sliced cucumbers tossed in a creamy sour cream dressing seasoned with everything bagel seasoning, white vinegar, and black pepper. Perfect as a light side dish or snack that can be served immediately or chilled to enhance flavors.

Ingredients

Salad

  • 2 English cucumbers, thinly sliced, peeled and deseeded if desired
  • 1 teaspoon salt + more to taste
  • 1/2 cup thinly sliced red onion

Dressing

  • 1/2 cup sour cream
  • 3 tablespoons everything bagel seasoning
  • 2 teaspoons white vinegar
  • 1/2 teaspoon black pepper + more to taste

Instructions

  1. Salt the Cucumbers: Toss the thinly sliced cucumbers with 1 teaspoon of salt in a colander placed over the sink or a bowl. Allow them to rest for 30 minutes to an hour. This process helps draw out excess moisture from the cucumbers, ensuring a crisp texture in the salad.
  2. Drain and Dry: After the resting period, gently rinse the cucumbers to remove excess salt. Then, press them down with your hands to squeeze out residual moisture or pat them dry using paper towels to prevent a watery salad.
  3. Prepare the Dressing: In a mixing bowl, combine the sour cream, everything bagel seasoning, white vinegar, and 1/2 teaspoon of ground black pepper. Mix thoroughly to blend all the flavors into a smooth dressing.
  4. Combine Salad and Dressing: Add the drained cucumbers and thinly sliced red onion to the dressing. Toss gently until everything is coated evenly. Taste and adjust salt and pepper according to preference.
  5. Chill or Serve: The salad can be served immediately for fresh crispness or refrigerated for at least 30 minutes. Chilling allows the flavors to meld beautifully, enhancing the overall taste.

Notes

  • Peeling and deseeding cucumbers is optional but can reduce bitterness and excess moisture.
  • Everything bagel seasoning can be adjusted based on taste or replaced with a similar mixed seasoning blend.
  • For a lighter variation, use Greek yogurt instead of sour cream.
  • Refrigerate leftovers in an airtight container; consume within 2 days for best freshness.
  • This salad pairs well with grilled meats or as a side dish in a brunch spread.
