Ingredients

Chicken and Seasoning

  • 4 (6-ounce) boneless skinless chicken breasts
  • 1 teaspoon Italian seasoning (or a mix of oregano, thyme, basil, and rosemary)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Sauce

  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • ¼ cup finely chopped yellow onion
  • ½ cup sun-dried tomatoes, thinly sliced
  • 2 cups baby spinach
  • 1 ½ cups heavy cream
  • ¼ cup freshly grated parmesan cheese

Instructions

  1. Season chicken: Season both sides of each chicken breast generously with Italian seasoning, kosher salt, and freshly ground black pepper to ensure the chicken is well flavored.
  2. Sear chicken: Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add the chicken breasts and sear them for 3 to 4 minutes per side until they develop a golden-brown crust. Remove the chicken from the skillet and set aside to rest.
  3. Cook onions: In the same skillet, add the remaining 1 tablespoon of olive oil and the finely chopped yellow onion. Sauté for 2 to 3 minutes until the onion softens and becomes translucent.
  4. Cook tomatoes and garlic: Add the thinly sliced sun-dried tomatoes and minced garlic to the skillet. Sauté for about 1 minute until the garlic is fragrant and the tomatoes are warmed through.
  5. Add spinach: Add the baby spinach to the skillet and sauté for another minute, just until the spinach begins to wilt but remains vibrant green.
  6. Add cream and cheese: Pour in the heavy cream and sprinkle in the freshly grated parmesan cheese. Stir everything together and bring the mixture to a gentle simmer to allow the sauce to thicken slightly and meld the flavors.
  7. Simmer with chicken: Return the seared chicken breasts to the skillet. Spoon some of the creamy sauce over the chicken and continue to cook for about 5 minutes until the chicken is heated through and the sauce has thickened to your liking.
