  • 50g (1/2 cup) Parmesan cheese, freshly grated

Instructions

  1. Heat the cream: Warm the double cream in a pan over low heat, making sure not to let it boil. Gently heating preserves the cream’s smooth texture without curdling.
  2. Add Parmesan cheese: Remove the pan from heat and whisk in the freshly grated Parmesan cheese until it melts completely and the sauce becomes smooth. Taste the sauce and add salt as needed to enhance the flavor.
  3. Coat the pasta: Add cooked pasta directly to the pan with the sauce and gently shake the pan to evenly coat the pasta. If the sauce is too thick, loosen it by stirring in up to 1/3 cup of the reserved pasta cooking water. Serve immediately for the best creamy texture.
