This Creamy Fruit Salad is a refreshing and healthy dessert featuring a colorful mix of strawberries, grapes, kiwis, blueberries, bananas, and mandarin oranges tossed in a smooth vanilla Greek yogurt dressing sweetened with honey and brightened with fresh lime juice. Perfect for a quick snack or a light dessert, it’s easy to prepare and serves 8 people.

Ingredients

Fruit

  • 1 Pound Strawberries (hulled and sliced)
  • 2 Cups Grapes (halved)
  • 4 Kiwis (peeled and sliced)
  • 1 Cup Blueberries
  • 2 Bananas (sliced)
  • 1 15oz Can Mandarin oranges (drained with 2 tablespoons of juice reserved)

Dressing

  • 1 Cup Vanilla Greek yogurt
  • 2 Tbsp Honey
  • 1 Tbsp Fresh lime juice
  • 2 Tbsp Reserved mandarin orange juice

Instructions

  1. Combine Fruit: Add the strawberries, grapes, kiwi, blueberries, bananas, and mandarin oranges to a large mixing bowl, ensuring all fruit is prepared as specified (hulled, peeled, sliced, or halved).
  2. Prepare Dressing: In a separate bowl, whisk together the reserved mandarin orange juice, vanilla Greek yogurt, honey, and fresh lime juice until the mixture is smooth and well combined.
  3. Toss Salad: Pour the dressing over the mixed fruit and gently stir with a spatula or spoon until all the fruit pieces are evenly coated with the creamy dressing.
  4. Chill: For best flavor and texture, cover the salad and refrigerate for 20 to 30 minutes before serving. This allows the flavors to meld and the salad to chill nicely.

Notes

  • Use fresh, ripe fruit for the best flavor and texture.
  • The salad is best served chilled but can be served immediately if desired.
  • Bananas may brown quickly, so add them last or toss with a bit of lemon juice to maintain color.
  • For a dairy-free version, substitute vanilla Greek yogurt with a plant-based yogurt alternative.
  • Adjust the amount of honey according to preferred sweetness.
